Lately, I feel like eating walnuts. Yes, it’s a bit the season 😉 And for a change, I made a walnut pesto. I might as well tell you that your pasta takes on a whole new dimension 🙂
For the more greedy, you can add cream for a creamier texture, at the same time as adding pesto to your dish. When I say cream, I mean either crème fraîche or soy cream – because this vegetal cream is a very good substitute and much less caloric 😉
It’s a very easy recipe that will delight your taste buds!
Ingredients:
- 90g of walnuts
- 80g of Parmesan (grated or not – cut into pieces, depending on your blender)
- 60-80g of olive oil
- 3 tbsp lemon juice
- a hint of nutmeg
- salt, pepper
- optional : garlic, oregano, …
If you like garlic, you can add a small clove which will give a stronger pesto taste. You can also add herbs such as oregano which will add a more subtle flavour.
Preparation:
1/ In your blender, put the pieces of Parmesan cheese and blend until you obtain a powdery consistency.
2/ Add all the other ingredients and mix again.
3/ Adjust the mix according to the consistency you like, you can mix again if necessary.
Tip: It is best to take the jar out a little in advance so that the texture of the pesto is not too “hard”. It will mix better in your pasta even if it is hot 🙂
