Ingredients:

  • 60 g polenta
  • 25 g finely grated Parmesan cheese
  • 1/2 tsp lemon zest (OR chopped herbs)
  • 1 egg
  • 500 g zucchini, cut into French fries
  • 1 tbsp. extra-virgin olive oil

Preparation of the air fryer zucchini fries:

1/ Cut the zucchinis on the bias for larger French fries.

2/ Mix the polenta, Parmesan and lemon zest in a large bowl. Season with salt and pepper. Lightly beat the egg in another large bowl.

3/ Sponge the zucchinis a little if they’ve given off water.

4/ Add the zucchinis to the bowl with the egg and mix until well coated. Transfer the zucchini to the polenta mixture, leaving the excess egg at the bottom of the bowl. I use a pair of tongs for each preparation: one to dip the French fries into the egg mixture and another to mix in the breadcrumbs.

5/ Preheat your air fryer to 180°C.

6/ Toss the zucchinis until they are completely covered with the polenta mixture. Place the zucchini in the basket, leaving the excess polenta at the bottom of the bowl.

7/ Insert the basket into the air fryer. Cook for 10 minutes, shaking the basket halfway through cooking, or until the fries are golden and tender (for oven cooking, 20 to 30 minutes will be needed).
