Do you like to make sandwiches with sliced vegetables, sauces or other toppings?! This pita bread to garnish recipe will seduce you as much by its ease as by its many variations of toppings.
For me, pita bread is synonymous with conviviality. You just have to put them on the table with something to garnish them and each one helps himself to make his own sandwich: kebab, gyros, falafel, …
Here’s a little tip:
These pita breads can be frozen. Interleave a sheet of baking paper between each loaf to make them easier to defrost. Wrap them in a sheet of aluminium foil and reheat for 5-10 minutes in a preheated oven at 160°c.

Preparation : 5-10 min | Rest : 1h | Cooking : 15 minutes
For 8 large pita breads:
- 500g wheat flour
- 250g of water
- 1 sachet of dry baker’s yeast (8g) (or 20g of fresh yeast)
- 50g of olive oil
- 1 tbsp. lye sugar
- 1 tbsp salt
Preparation:
> Manual version :
1/ Put the yeast in a glass with lukewarm water (not more than 37°c, rely on your body temperature). Cover the glass with plastic wrap and let stand for 2 minutes. The yeast will make a small foam on top of the mixture.
2/ In a salad bowl, mix the rest of the dry ingredients: flour, sugar, salt.
3/ Add the olive oil, then the water with the yeast. Mix this preparation very gently, and knead it for 2 minutes. You should obtain a smooth and homogeneous dough.
4/ Leave the dough to rise for 1 hour.
5/ Separate the dough into 8 balls.
6/ Flour your worktop and spread each ball finely ( 1-2 mm thick) using a kitchen roll.
7/ Heat a pan without fat and cook the patties like pancakes, a few minutes on each side.
8/ Wrap them in a clean, dry cloth to prevent the pita bread from drying out.
> Version with heated food processor:
1/ Put the yeast in the bowl of your food processor with the water and heat for 2 minutes at 37°c.
2/ Add the flour, sugar, salt and olive oil and knead for 2 minutes. You should obtain a smooth and homogeneous dough. If necessary, remove the dough from the bowl and knead for 1 minute.
3/ Leave the dough to rise for 1 hour.
4/ Separate the dough into 8 balls.
5/ Flour your worktop and spread each ball finely ( 1-2 mm thick) using a kitchen roll.
6/ Heat a pan without fat and cook the patties like pancakes, a few minutes on each side.
7/ Wrap them in a clean, dry cloth to prevent the pita bread from drying out.
To be eaten during the day.
