In June 2020, I shared with you a recipe for express homemade plant milk without filters, and since then I’ve improved its composition. With prices on the rise and its predominantly water-based composition, it’s an easy decision. I no longer buy almond or hazelnut milk, as it only takes 3 minutes to make. This quick and easy plant milk recipe will probably be a must-have for you before long!
Just 3 ingredients: water, nut butter and xanthan gum if you want the milk to stay smooth for several days.
You can vary the pleasures depending on the butter: hazelnuts, cashews, walnuts, even peanut butter… There are as many varieties as there are milks! The quality of cream can vary from one brand to another, so it’s best to use a smooth butter.
In just 3 minutes, you can be enjoying delicious, fresh plant milk.
Total time: 3 minutes
Ingredients for 1 L of plant milk :
- 1 Litre water
- 3-4 level tablespoons almond butter (or the nut butter of your choice: hazelnut, cashew, peanut, …)
- 1 level tsp xanthan gum
- Optional: For a sweet touch, add maple syrup and vanilla extract.
Adjust the nut butter dosage to suit your taste. Personally, I like it “intense” 😉 Of course, you can flavour it as you like with cocoa powder, instant coffee, etc. I recommend maple syrup as it’s the best natural sugar for our bodies.
Preparation :
1/ In your blender / food processor, add the almond butter (or other nut butter), water and xanthan gum.
2/ Blend the mixture on full power for about 1 minute until the liquid is smooth and creamy. And it’s ready!
3/ Transfer the plant milk to an airtight bottle. It will keep in the refrigerator for about 3 to 4 days.
Info: The more xanthan gum, the creamier the texture, like a custard. In winter, I like a slightly thicker, creamy texture to make chocolate milks with a hint of cinnamon – it’s really incredible!
Tip: If you don’t have a food processor, you can use a shaker and elbow grease! Just add a smaller amount of water to the almond butter and xanthan gum. Once diluted, you can add more water and mix again.
